You know what I love? I love when I am walking through the grocery store or I am sitting on my couch watching my son terrorize my living room, I sometimes get a recipe idea that smacks me dead in my face and the idea is so amazing that I just have to try it as soon as possible! That is what happened when I created this Strawberry and Granola Yogurt No Bake Pie. I was walking through the grocery store and I picked up a hefty bag of granola and I immediately thought how yummy and crunchy my granola is going to be on my yogurt. It was as if a recipe idea was buried deep in my cranium dying to be implemented and I said aloud “I’m going to make a yogurt and granola pie!” Yep, right there in lane 5 where anyone who was 2 feet away from me could hear my idea that I practically yelled out. That’s how it happens to me when I get recipe idea.
When I first started playing with this idea, I was thinking of just putting the yogurt in a ready-made pie crust and sprinkle granola on top and let it freeze. Then I stopped myself and thought how incredibly lazy that would be of me and thinking of when it would thaw how it would just go back to being yogurt again. No, I needed to stabilize this pie and add some flavor. So, I added some whipped topping, strawberry preserves, fresh strawberries and my crunchy honey oat granola to top it off. Boy am I glad I did! I am telling you guys, this pie is currently my favorite dessert and probably will be my favorite dessert for the entire summer!
Having a go-to dessert for the spring and summer is absolutely necessary. You have to have the right dessert for the warmer months. You can’t have a dessert that is too heavy because it’s hot outside and you’ll end up feeling sluggish all day; you can’t have anything with a lot of spice because you are going to get all of that during the fall; and warm desserts in the summer and spring are kind of like “really?”. Desserts that are cool, light, and fruity is the trifecta for creating the perfect summer and spring dessert. This Strawberry and Granola Yogurt No Bake Pie has all three elements. Not to mention, it is easy as hell! Yep, just add everything in a bowl, pour it in a graham cracker crust, let it chill, and you’re done!
This Strawberry and Granola Yogurt No Bake Pie is the perfect no-bake recipe for the summer! What I love about this no-bake pie is you can personalize this pie however you want! You can use blueberries, cherries, apricots, or peaches! Whatever you want to do won’t be a bad idea. I promise. This recipe is absolutely foolproof. The best part of this recipe is you can make this as healthy as you want. You can use greek yogurt or sugar-free whipped topping. You can even make this pie vegan! Yes, that’s right, VEGAN! Use soy yogurt and make a coconut whipped topping. Add your fruit preserves and there you have it! This dessert is perfectly versatile.
- 2 c. plain vanilla yogurt
- 8 oz. whipped topping
- 4 tbsp. Strawberry preserves
- 1 c. sliced strawberries
- 1 c. crunchy oat granola
- 1 premade Graham cracker crust
- In a medium bowl, add the yogurt and whipped topping. Fold the ingredients together. Add the 4 heaping tablespoons of strawberry preserves on top of the mixture. Use a butter knife and swirl the preserves into the yogurt mixture. Pour the mixture into the graham cracker crust.
- Layer the sliced strawberries on top of the pie and sprinkle the granola on top. Cover the pie with crust lid or plastic wrap and place in the freezer for 2 hours or in the refrigerator for 4 hours or overnight.
