Ingredients

  • 1 c. mashed bananas
  • 1/3 c. sour cream
  • 1/2 c. light brown sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 2 1/2 c. all-purpose flour
  • 2 1/2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 5 tbsp. unsalted butter, cold
  • 1 c. chopped walnuts or pecans

GLAZE

  • 1/2 c. (1 stick) unsalted butter
  • 3/4 c. powdered sugar
  • 1/4 tsp. Maple extract
  • 1/2 tsp. Pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the scone dough: In a large bowl, whisk together mashed bananas, sour cream, brown sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  6. Fold in the chopped nuts.
  7. Shape and bake the scones: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 18-22 minutes or until the edges are lightly golden brown and a toothpick inserted into the center comes out clean.
  9. Make the glaze: While the scones are baking, melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter turns a golden brown color and has a nutty aroma. Be careful not to burn it.
  10. Remove the pan from the heat and let the butter cool slightly.
  11. Whisk in the powdered sugar, maple syrup, and salt until smooth.
  12. Glaze and serve: Drizzle the glaze over the warm scones and enjoy!
