- 1 c. mashed bananas
- 1/3 c. sour cream
- 1/2 c. light brown sugar
- 1 large egg
- 1 tsp. pure vanilla extract
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 tsp. salt
- 5 tbsp. unsalted butter, cold
- 1 c. chopped walnuts or pecans
GLAZE
- 1/2 c. (1 stick) unsalted butter
- 3/4 c. powdered sugar
- 1/4 tsp. Maple extract
- 1/2 tsp. Pure vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat.
- Make the scone dough: In a large bowl, whisk together mashed bananas, sour cream, brown sugar, egg, and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Fold in the chopped nuts.
- Shape and bake the scones: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 18-22 minutes or until the edges are lightly golden brown and a toothpick inserted into the center comes out clean.
- Make the glaze: While the scones are baking, melt the butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter turns a golden brown color and has a nutty aroma. Be careful not to burn it.
- Remove the pan from the heat and let the butter cool slightly.
- Whisk in the powdered sugar, maple syrup, and salt until smooth.
- Glaze and serve: Drizzle the glaze over the warm scones and enjoy!
