Ingredients

  • 1 Red Bell pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 1 Orange Bell pepper, sliced
  • 1 Small Yellow Onion, sliced
  • 2 tbsp. Olive oil
  • 4 Large Sausage or Bratwurst
  • 1 1/2 c. Beer
  • 1 tbsp. Light brown sugar
  • 4 garlic cloves, minced
  • Garnish: fresh thyme

Instructions

  1. Add olive oil in a large, heavy-duty skillet on medium-high heat. Once heated, add the sliced peppers and onions. Cook until completely softened, about 10-15 minutes.
  2. In the middle of the pan, move the peppers and onions around the edge of the pan and place the sausages in the middle to cook. Cook on both sides for 5 minutes.
  3. In a large measuring cup, add the beer, light brown sugar, and garlic. Pour into the skillet with the peppers and sausages. Reduce the heat to low-medium, and the beer will begin to reduce and slightly thicken into a sauce, about 5-10 minutes. Garnish with fresh thyme and serve.
