Description
Brown Sugar Pound Cake with buttery icing that is perfect for breakfast, brunch, or dessert. This Brown Sugar Pound Cake is also swirled with cinnamon sugar.

- 2 sticks unsalted butter, softened
- 1 c. lite brown sugar, packed
- 4 eggs
- 1 ½ tsp. vanilla extract
- 1 ¾ c. flour
- ½ tsp. salt
- ½ tsp. baking powder
- 1 ½ tbsp. cinnamon
- 2 tbsp. sugar
- Icing:
- 1 ½ c. powdered sugar
- 1 tsp. vanilla extract
- ½ tsp. salt
- 2 tbsp. butter, melted
- 2 tbsp. milk
Instructions
- Preheat oven to 350 Degrees and spray a loaf pan liberally with baking spray or line with parchment paper and set aside.
- In a large bowl, mix the butter until creamy and add the cup of brown sugar and blend together. Add the eggs one at a time until well mixed and add the vanilla extract. Mix the flour, salt, and baking powder. Use a rubber spatula and spoon half of the batter on the bottom, mix together the cinnamon and sugar and sprinkle on top of the first half, and finally spoon the other half of the batter on top of the cinnamon sugar mixture. Use a butter knife and make swirls of the batter and the cinnamon sugar mixture. Bake for 40-45 minutes. Allow to cool.
- To prepare icing: Mix together the powdered sugar, vanilla extract, salt, melted butter, and milk until creamy. Add more milk a teaspoon at a time to reach desired consistency. Pour on top of cooled pound cake and allow to set before serving.
