- 4 eggs
- 2 tbsp. Water
- 6 c. Captain Crunch cereal, crushed
- 12 Boneless Skinless Chicken Tenderloin
- 2 tsp. Salt
- 1 1/2 tsp. Black pepper
- Oil for frying
Instructions
- In a shallow dish, whisk together the flour, salt, and black pepper.
- In a separate shallow dish, beat the eggs and water together.
- In a food processor, crush the Captain Crunch cereal until it resembles coarse crumbs. Pour the crumbs into a third shallow dish.
- Dip each chicken tenderloin into the flour mixture, coating all sides evenly.
- Next, dip the flour-coated tenderloin into the egg mixture, making sure it’s fully covered.
- Finally, coat the tenderloin in the crushed Captain Crunch cereal, pressing gently to help the crumbs adhere.
- Heat the oil in a large skillet or deep fryer over medium-high heat.
- Carefully place the coated chicken tenders in the hot oil, being careful not to overcrowd the pan.
- Cook for 5-7 minutes per side, or until the chicken is cooked through and the coating is golden brown and crispy.
- Remove the chicken tenders from the oil and drain on a paper towel-lined plate on place on a cooling rack.
- Serve immediately with your favorite dipping sauces.
