- 1–½ cup Brown Sugar
- 2 sticks Unsalted Butter, Room Temperature
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 2 cups Quick Cooking Oats
- 1 teaspoon Cinnamon
- 1 teaspoon Espresso Powder
- 1–½ cup Flour
- 1 teaspoon Baking Soda
- ¼ teaspoons Salt
- 2 cups Chocolate Chips
Instructions
- Preheat oven 350ºF.
- In a large bowl, beat the brown sugar and butter until creamy. Stir in the vanilla extract and egg until fluffy. Stir in oats, cinnamon, espresso powder, flour, baking soda, and salt until well blended. Lastly, stir in chocolate chips.
- On a well sprayed or greased backing sheet, drop cookie dough 2 inches apart and bake for 9-11 minutes. When finished baking, place on cooling rack.
