- 4 Thin Chicken Breasts
- 2 c flour
- 2 tbsp. Corn starch
- 1 tsp.Salt
- 1 tsp. Ground black pepper
- 4 whole eggs
- 2 tbsp. water
- Vegetable oil, for frying
- 12 oz. Buffalo Wing Sauce
- 2 tbsp. Butter
- 4 garlic cloves, minced
- 4 Potato buns
- Garnish: Blue Cheese crumbles, lettuce, sliced cheddar cheese, ranch dressing
Instructions
- Using a heavy metal shallow skillet, fill with vegetable oil ⅔rds full. Place on medium-high heat. Meanwhile, whisk together flour, cornstarch, salt, and pepper in a separate bowl. Whisk eggs in another bowl until yolks and whites have combined with two tablespoons of water.
- Pour buffalo sauce, butter, and minced garlic into a medium saucepan and place on low-medium heat. Once the butter has melted into the sauce, allow it to simmer for about 2 minutes and remove it from heat.
- Season the chicken breast on both sides with salt and pepper; dredge the chicken breast through the flour mixture on both sides, shake off excess; dredge through the egg mixture on both sides, shake off excess; and dredge through the flour mixture again on both sides and shake off excess.
- Place in hot oil and cook on both sides for 7-10 minutes on each side, just until golden brown. Remove from heat using tongs and place on a plate lined with paper towel and turn on both sides to remove excess oil while still hot, dredge through buffalo sauce on both sides and place on a cooling rack.
- Once the chicken is finished, serve on a potato bun with butter lettuce and toppings of choice
