- 2 c. flour
- 1 c. sugar
- 1 tsp. Baking powder
- ½ tsp. Baking soda
- ½ tsp. Salt
- 2 large eggs
- 1 stick butter, melted
- 2 tsp. Vanilla extract
- 1 Large Honeycrisp Apple, grated
- CRUMBLE TOPPING
- ⅓ c. brown sugar
- 2 tbsp. Flour
- ⅛ tsp. Cinnamon
- 2 tbsp. Pecan pieces
- 4 tbsp. Cold butter, cubed
Instructions
- Preheat oven to 350 degrees and line cupcake muffin tin with cupcake liners. Set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Next. combine the eggs, melted butter, vanilla extract, and fold. The batter will be thick. Finally, add the grated apple (press out a little of the apple juice) and fold in the muffin batter.
- To make crumble: In a medium bowl, add the brown sugar, flour, pecans, cinnamon, and butter and use a fork or a pastry cutter blend the butter in with the dry ingredients until coarse crumbs occur.
- Use an ice cream scoop to add the batter to the muffin tins. Sprinkle about one tablespoon of crumble topping on top of each muffin and bake in the middle rack for 15 minutes or until a toothpick can be inserted and comes out clean. Allow to cool slightly and serve.
