- CRUST
- 1 1/4 c. pretzel crumbs (from about 2 cups of pretzels)
- 1 stick unsalted butter
- FOR PIE
- 6 tbsp. unsalted butter
- 6 oz. semi-sweet chocolate
- 1/2 c. creamy peanut butter (divided)
- 1/4 c. unsweetened cocoa powder
- 2 large eggs
- 1 c. sugar
- 2 tsp. vanilla extract
- 3/4 c. flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
Instructions
- Preheat oven to 350 Degrees: Grind the pretzels in a food processor until they become fine crumbs. Place the pretzel crumbs in a bowl and pour in the melted butter. Use a rubber spatula to blend well.
- Spoon three quarter of the mixture into a 9-inch pie plate and press the mixture along the side of the plate until you have a 1/4 inch thick shell all the way around. Spoon the rest of the mixture into the center of the plate and press it to form the bottom of the shell, making sure the bottom and sides are joined.
- Bake until the shell is slightly browned, about 5-7 minutes. Remove it from the oven and let cool. in the refrigerator for at least 30 minutes before filling.
- To make the pie: Fill a medium saucepan with water, leaving 2 to 3 inches at the top and bring to a boil and place a heat proof bowl on top.
- Place the butter, chocolate, and 1/4 cup of the peanut butter in the large heat proof bowl and stir occasionally until all of the contents have melted together. Remove the bowl from the heat and whisk in the cocoa powder until smooth. Set the bowl aside to cool.
- Place the remaining 1/4 cup of peanut butter in a small bowl and place in the microwave for 1 minute until it has completely melted. The peanut butter should be runny. Set aside.
- Whisk together the eggs, sugar, and vanilla in a large bowl. Slowly pour the cooled chocolate mixture into the egg mixture and whisk briskly until smooth.
- Stir together the flour, baking powder, and salt in a small bowl. Add to the brownie batter and stir until smooth.
- Pour the brownie batter into the pretzel crust, filling it to just below the very top. Spoon three or four small dollops of the melted peanut butter on top of the brownie batter and gently swirl it into the batter with a table knife or a toothpick.
- Bake until a knife inserted in the middle come out clean, about 35-40 minutes. Allow to cool before serving.
