For the Chicken Filling
- 1 lb ground chicken
- 1 tbsp olive oil
- 1/3 cup Thai sweet chili sauce
- 1 tsp ginger paste
- 1 tsp lemongrass paste
- 1 tbsp low-sodium soy sauce
- 2 green onions, chopped
- Salt & pepper to taste
For the Crunchy Slaw
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced cucumber
- 1 tbsp rice vinegar or lime juice (optional)
For Serving
- Butter lettuce or romaine leaves
- Chopped cilantro
Optional: extra green onions, sesame seeds, or chopped peanuts
Instructions
- Heat oil in a large skillet over medium heat. Add ground chicken and cook, breaking it up with a spoon, until fully cooked and browned—about 6-8 minutes.
- Stir in the ginger paste, lemongrass paste, soy sauce, and sweet chili sauce. Simmer for a few minutes until the sauce thickens slightly. Add chopped green onions, salt, and pepper. Turn off heat.
- Mix shredded carrots and cucumber in a bowl. Drizzle with rice vinegar or lime juice if using. Toss to coat.
- Scoop chicken into lettuce leaves, top with slaw, garnish with cilantro and extras. Serve immediately.
