Description

This 3 way chili recipe is a Cincinnati classic! Spiced meat sauce over spaghetti topped with cheese. Easy homemade Skyline copycat recipe.

For the Chili:

  • 1 1/2 lb. lean ground beef
  • 2 tbsp. olive oil
  • 1 c. onion, diced (plus more for topping)
  • 2 garlic cloves, minced
  • 2 (15 oz.) cans tomato sauce
  • 6 oz. tomato paste
  • 14.5 oz. can diced tomatoes
  • 2 tbsp. chipotle sauce
  • 15.5 oz. can hot chili beans
  • 1/4 c. red wine
  • 1 c. water
  • 2 tbsp. Worcestershire sauce
  • 1.25 oz. chili seasoning
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1 oz. unsweetened chocolate
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cloves
  • 1 1/2 tbsp. light brown sugar
  • 1 bay leaf
  • Salt to taste

For Serving:

  • 1 box spaghetti noodles, cooked
  • 1 lb. bag shredded sharp cheddar cheese
  • Diced onions (optional)
  • Oyster crackers

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Cook the diced onions until soft and translucent, about 5-7 minutes.
  3. Add minced garlic and cook for 3 minutes, being careful not to let it burn.
  4. Add the ground beef and cook until browned completely, breaking it up into very fine pieces with a spatula as it cooks. This fine texture is key to authentic Cincinnati chili!
  5. Stir in the tomato paste, tomato sauce, diced tomatoes, chipotle sauce, chili beans, and water. Bring the mixture to a simmer.
  6. Add the Worcestershire sauce, red wine, chili seasoning, onion powder, garlic powder, black pepper, cayenne pepper, cinnamon, allspice, cloves, bay leaf, and unsweetened chocolate.
  7. Stir continuously until the chocolate melts completely into the sauce. Add the brown sugar and season with salt to taste.
  8. Reduce heat to low and let the chili simmer for at least 30 minutes, stirring occasionally. The longer it simmers (up to 1 hour), the better the flavors develop.
  9. While the chili simmers, cook spaghetti noodles according to package directions. Drain well.
  10. To serve: Place a generous portion of spaghetti on each plate. Ladle the hot Cincinnati chili over the spaghetti. Top with a mountain of shredded sharp cheddar cheese. Add diced raw onions if desired. Serve with oyster crackers on the side.
