- 2 tsp. Cinnamon
- ⅛ tsp. Nutmeg

Instructions
- To Make Syrup
- In a saucepan, on medium high heat, add both sugars, cornstarch, cinnamon, nutmeg, apple cider, and lemon juice and bring to a slight boil. The sauce will thicken and allow to cook for 5-10 minutes or until desired consistency is reached. Remove from heat and add vanilla extract and butter and stir until butter is melted. Pour in an airtight container or mason jar.
- To Make Pancakes
- In a medium saute pan on medium heat, melt the 2 tbsp. Butter. Add the apples and 2 tbsp. Sugar. Cook for 10 minutes until apples are soft cooked through. Pour in a bowl and mash the apples while still leaving chunks of apple. You can use an immersion blender to mash the apples or a food processor. Set aside.
- In a large bowl mix together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk together. Pour in the milk, vanilla extract, and melted butter. Mix together until well mix. Fold in the mashed apples until well mix.
- Heat the griddle on 350 Degrees and melt 1 tbsp. Butter. Once melted, pour ½ cup of pancake batter onto the griddle and allow to cook on one side for 3 minutes and flip and cook on the other side for 3 minutes. Repeat until batter is finished. Top with Apple Cider syrup. If you would like to top off with apples, repeat the first part of this recipe and cook another apple and a half in butter and sugar. Top off with walnut pieces.
