Apple Pie Slow Cooker Steel Cut Oatmeal Recipe

Description

Make your steel cut oatmeal in a slow cooker and in a few hours youll have Apple Pie Steel Cut Oatmeal with delicious chunks of apples and walnuts.


Ingredients

  • 1 1/2 c. Bob’s Red Mill Steel Cut Oatmeal
  • 2 tbsp. apple cider
  • 2 1/2 c. water
  • 2 tbsp. Bob’s Red Mill Coconut Sugar
  • 2 tbsp. light brown sugar
  • 1 tbsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3 Granny Smith Apples, peeled and diced
  • 4 tbsp. butter
  • 2 tbsp. light brown sugar
  • 1/4 tsp. cinnamon
  • 4 tbsp. butter
  • 1/2 c. milk
  • 1/2 c. chopped walnuts or pecans

Instructions

  1. In a slow cooker on low heat, add Bob Mill’s Steel cut oatmeal evenly to the bottom of the pot. Pour in the apple cider and water, add the cinnamon, nutmeg and sugars, and vanilla extract. Stir and cover with lid for 5-6 hours.
  2. In a medium saute pan, melt 4 tbsp. butter on medium to high heat, add the Granny Smith Apples and allow to cook for 10 minutes, until the apples start to sizzle. Add the 2 tbsp. brown sugar and cinnamon and continue to cook until caramelized, about 5-7 minutes. Remove from heat and set aside.
  3. Once the oatmeal is cooked, add the butter and milk and stir. If at any time the oatmeal seems too thick, add 1/4 cup of milk at a to loosen the oatmeal to desired consistency. Add the cooked apples and walnuts or pecans and stir. Serve very warm.
