Ingredients

  • 2 large eggs
  • 1 c. sugar
  • 1 c. pumpkin puree
  • ½ c. vegetable oil
  • 2 tsp. pumpkin spice
  • 1 tsp. pure vanilla extract
  • 1 ¼ c. cake flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 c. light brown sugar, packed
  • 6 tbsp. butter, room temperature
  • ½ c. pecans, chopped
  • 2 Honey Crisp Apples, sliced and cut in half

Instructions

  1. Preheat oven to 350 Degrees.
  2. In a large bowl, combine the 2 eggs, sugar, pumpkin puree, vegetables oil, pure vanilla extract, and mix together. In a separate bowl whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until smooth, set aside.
  3. Cord the apples, slice them slightly thin, and cut the full slice in half. In a small bowl, combine the brown sugar and butter and use a fork to mix both or a pastry cutter. Spray a 9 to 11 inch round cast iron skillet or round baking cake pan with baking spray. On the bottom of the pan sprinkle the brown sugar mixture evenly and sprinkle the pecan pieces on top. Then, layer the apples on top of the brown sugar and pecans. Use a rubber spatula to pour the cake batter on top evenly. Bake for 25-30 minutes or until a toothpick can be inserted and comes out clean.
  4. Allow to cool for 5-10 minutes. Place a large enough plate or serving platter on top of the pan, flip over and carefully lift the pan to allow the cake to slide out. Serve as desired or continue allow to cool.
