Description
This Chicken and Broccoli Alfredo Gnocchi dish are made with three different kinds of cheese, delicious chicken, and fresh broccoli all mix with soft gnocchi.
Ingredients
Scale
- 1 lb. chicken tenderloin
- 1 tbsp. Olive oil
- 2 tbsp. butter
- 12 oz. broccoli cuts
- 3 garlic cloves, minced
- 1 lb. Gnocchi
- 2 1/4 c. heavy cream
- 1 c. provolone, shredded cheese
- 1 c. white cheddar cheese, shredded cheese
- 1 c. Parmesan-Reggiano cheese, shredded cheese
- Garnish: Fresh Parsley, chopped
Instructions
- In a medium skillet on medium-high heat, heat the olive oil. Season the chicken tenders on both sides with salt and pepper. Cook on both sides for 3-5 minutes. Once finished, remove from heat and place on a cutting board. Roughly chop the chicken into pieces and set aside.
- In a shallow medium-large saute pan on medium heat, melt the butter. Add the minced garlic to the pan and cook for 2-3 minutes. Be sure not to burn the garlic.
- Add the heavy cream and allow to come to a slight simmer. Once the cream is steaming, add the cheese (provolone, white cheddar, and Parmesan-Reggiano grated cheese) and whisk until the cream and cheese combine and become one sauce. Season with kosher salt and black pepper to taste.
- Bring a large pot of water to a boil. Add the gnocchi and cook for 7-10 minutes. You’ll know when the gnocchi is finished because they will float to the top. Drain the gnocchi.
- Add the gnocchi, chicken, and broccoli to the cream sauce and mix until well-mixed. Cover with a lid and allow to simmer on low heat for 15 minutes. Serve in a pasta dish and top with additional Parmesan Reggiano cheese and chopped parsley.
