Description

This Chicken and Broccoli Alfredo Gnocchi dish are made with three different kinds of cheese, delicious chicken, and fresh broccoli all mix with soft gnocchi.


Ingredients

Scale
  • 1 lb. chicken tenderloin
  • 1 tbsp. Olive oil
  • 2 tbsp. butter
  • 12 oz. broccoli cuts
  • 3 garlic cloves, minced
  • 1 lb. Gnocchi
  • 2 1/4 c. heavy cream
  • 1 c. provolone, shredded cheese
  • 1 c. white cheddar cheese, shredded cheese
  • 1 c. Parmesan-Reggiano cheese, shredded cheese
  • Garnish: Fresh Parsley, chopped

Instructions

  1. In a medium skillet on medium-high heat, heat the olive oil. Season the chicken tenders on both sides with salt and pepper. Cook on both sides for 3-5 minutes. Once finished, remove from heat and place on a cutting board. Roughly chop the chicken into pieces and set aside.
  2. In a shallow medium-large saute pan on medium heat, melt the butter. Add the minced garlic to the pan and cook for 2-3 minutes. Be sure not to burn the garlic.
  3. Add the heavy cream and allow to come to a slight simmer. Once the cream is steaming, add the cheese (provolone, white cheddar, and Parmesan-Reggiano grated cheese) and whisk until the cream and cheese combine and become one sauce. Season with kosher salt and black pepper to taste.
  4. Bring a large pot of water to a boil. Add the gnocchi and cook for 7-10 minutes. You’ll know when the gnocchi is finished because they will float to the top. Drain the gnocchi.
  5. Add the gnocchi, chicken, and broccoli to the cream sauce and mix until well-mixed. Cover with a lid and allow to simmer on low heat for 15 minutes. Serve in a pasta dish and top with additional Parmesan Reggiano cheese and chopped parsley.
