  • 6 Boneless Skinless Chicken Thighs
  • 2 tbsp. Olive oil
  • 1 tsp. Salt
  • 1 tsp. Black pepper
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Onion powder
  • 1 tsp. Dried oregano
  • 1/2 lemon
  • 15 oz. diced tomatoes
  • 1 tbsp. Basil paste or 1 tbsp. Fresh basil, chopped
  • 3 garlic cloves, diced
  • 15 oz. white beans (cannellini beans), drained
  • 2 handfuls of fresh spinach
  • 1 tbsp. Lemon juice
  • 2/3 c. grated parmesan cheese divided
  • Garnish: chopped fresh basil, lemon juice

Instructions

  1. Place the chicken thighs in a large bowl. Add the olive oil, salt, black pepper, garlic powder, onion powder, dried oregano, and squeeze half a lemon of the chicken. Use your hands and toss the ingredients together. Cover with plastic wrap and in the refrigerator for at least, 30 minutes.
  2. Use a large shallow pan, and heat on medium-high heat.
  3. Once the pan is hot, add the marinated chicken thighs to the pan, making sure not to overcrowd them. You may need to cook them in batches depending on the size of your pan. Cook each side for about 5-6 minutes, or until golden brown and cooked through. Once cooked, remove the chicken from the pan and set aside.
  4. In the same pan, add the diced tomatoes, basil paste (or fresh basil), and diced garlic cloves. Stir well to combine and let it simmer for about 3-4 minutes to allow the flavors to meld together.
  5. Next, add the drained white beans to the pan and stir to combine with the tomato mixture. Let it cook for another 2-3 minutes to heat the beans through.
  6. Once the beans are heated, add the fresh spinach to the pan. Stir gently until the spinach wilts and combines with the tomato and bean mixture. Add half of the grated parmesan cheese to the mixture along with the lemon juice.
  7. Return the cooked chicken thighs to the pan, nestling them into the tomato and bean mixture. Let everything simmer together for another 2-3 minutes to allow the flavors to blend.
  8. Finally, sprinkle the rest of the grated parmesan cheese evenly over the top of the dish. Cover the pan and let it cook for another 1-2 minutes, or until the cheese is melted and bubbly.
  9. Once everything is heated through and the cheese is melted, remove the pan from the heat. Serve the chicken with white beans and tomatoes hot, garnished with additional freshly chopped basil or a squeeze of lemon juice if desired.
