Description

These Chocolate Covered Brownie Bites are super easy and very versatile. You can package these and serve as gifts or great dessert appetizers.


Ingredients

Scale
  • 1 stick Unsalted Butter
  • 10 ounces, weight Semi-sweet Chocolate, Chopped
  • 1½ cup Sugar
  • 4 whole Eggs
  • 1 teaspoon Vanilla Extract
  • ¾ cups Flour
  • ½ teaspoons Salt
  • ¼ cups Hershey chocolate sauce
  • 24 caramel chews, unwrapped
  • Chocolate Glaze
  • 8 oz. Semi-Sweet Chocolate, Chopped
  • 1 c. Heavy Whipping Cream
  • 2 tbsp. Light Corn Syrup
  • 2 tsp. Vanilla Extract
  • 1/2c. chopped pecans
  • 1/2 c. toffee bits

Instructions

  1. Preheat oven to 325 F: In a saucepan over low heat, melt the butter then add the chocolate. Stir the chocolate with a rubber spatula until blended well. Remove from heat, set aside and allow to cool to room temperature.
  2. In a large bowl, beat together the sugar and the eggs, adding eggs one at a time. Add the vanilla extract, flour, salt and chocolate sauce (should be at room temperature not hot). Then add the chocolate mixture and beat with a handheld mixer until well blended. Spray a mini muffin tin with baking spray. Use a cookie scooper and scoop the brownie batter into each muffin tin. Place a caramel chew in the middle of each muffin tin. Use a spoon to spoon the excess brownie batter over top the caramel chew. Bake for 12-15 minutes.
  3. Allow the brownies to cool in the pan for 10 minutes and remove from tin and set on cooling rack.
  4. Making the chocolate glaze:
  5. Set the chocolate in a medium-sized bowl. In a small sauce pan,pour in the cream and corn syrup and bring to a slight boil. Pour the hot cream over the chocolate and using a rubber spatula, stir until the chocolate has melted and smooth and add vanilla extract. Set aside.
  6. Take each brownie bite and dip inside the chocolate glaze, face down, and turn to wax paper or a silicone sheet. Continue until all brownie bites have been dipped. Mix the pecans and toffee pieces in a small bowl. While wet, sprinkle the brownies with pecan and toffee bits mixture. Allow the chocolate to set before serving.
