Description

Taking the traditional Churro recipe and making them into Churro Whoopie Pies! These Churro Whoopie Pies are the best of both worlds!


Ingredients

Scale
  • 1 c. water
  • 1 stick butter
  • ¼ tsp. salt
  • 1 c. flour
  • 3 eggs
  • vegetable oil, for frying
  • ¼ c. sugar
  • ¼ tsp. cinnamon
  • Filling
  • 4 tbsp. butter, softened
  • ¼ c. shortening
  • 2 c. powdered sugar
  • 1 tbsp. vanilla extract

Instructions

  1. In a medium sauces pan, bring water and butter to a boil. Once the butter has melted, add the salt and flour. Using a wooden spoon, vigorously stir the flour until it forms into a ball of dough. Once this is complete, remove from heat and add eggs one at a time adding another once the egg has blended well into the dough.
  2. Place the dough into a piping bag with a star tip. On a sheet of parchment paper, pipe the churro dough making churro circles about 1-inch-wide or desired size. Use scissors to cut the edge of the dough once desired size is reached. Heat the oil to 350 Degrees and place the churros into oil, frying until golden. Use a slotted spoon and place on lined paper towel. Mix sugar and cinnamon together in a small bowl and add the churros to the cinnamon sugar mix to coat with sugar mixture. Set aside.
  3. In a small bowl, mix together the butter and shortening. Slowly add the powdered sugar and vanilla extract. Continue to mix until creamy. Spread on churro and place another churro on top.
