Ingredients

  • 1 c all purpose flour
  • 1/8 tsp salt
  • 1/3 c powdered sugar
  • 1 stick cold, unsalted butter, grated
  • 4 eggs
  • 2 c sugar
  • 6 tbsp. all-purpose flour
  • 6 tbsp. Grapefruit juice, freshly squeezed
  • 1 tbsp. Grapefruit zest
  • 1 tbsp. Lemon juice
  • 1 drop pink gel food coloring (optional)

Instructions

  1. Preheat oven to 350 Degrees. Line a 9X13 baking dish with aluminum foil. Spray with baking spray and set aside.
  2. In a large mixing bowl, combine the salt, flour, and powdered sugar. Whisk together with a fork. Add in the cold butter and use your fork or a pastry cutter to blend in the butter into the dry ingredients until large clumps of dough form. Then use your hand to form into a ball.
  3. Pat the dough into the bottom of the baking dish and bake for 7 minutes. Allow the crust to cool.
  4. In a separate mixing bowl, using a mixer, beat the eggs, sugar, grapefruit juice, zest and lemon juice together. Add the food coloring if desired. Pour over the baked crust and place bake into the oven for 30-35 minutes. The edges should be somewhat golden and crisp looking. If a toothpick is inserted, it should come out clean.
