Easy Pumpkin Cobbler Recipe

Ingredients

  • 3 eggs
  • 1 c. sugar
  • 15 oz. Pumpkin Puree
  • c. heavy cream
  • 2 tsp. Pumpkin spice
  • 1 tsp. Vanilla Extract
  • 1 tsp. Salt
  • TOPPING
  • c. light brown sugar
  • c. sugar
  • 1 tsp. Cinnamon
  • ¼ tsp. Salt
  • 1 stick butter
  • 1 ½ c. flour

Instructions

  1. Preheat oven to 375
  2. In a large bowl, blend together the eggs, sugar, pumpkin puree, heavy cream, pumpkin spice, vanilla extract, and salt. Use a handheld or standing mixer and blend the ingredients until well combined and smooth.
  3. In a separate bowl, add the brown sugar, sugar, cinnamon, salt, flour, and combine using a fork. Pour in the melted butter and combine using a fork. The mixture will begin to look crumbly.
  4. Pour the pumpkin mixture, in 9-10 inch cast iron skillet or similar casserole dish. Smooth the top. Sprinkle the crumble mixture on top of the pumpkin puree evenly. Bake for 35- 40 minutes.
  5. Allow to cool slightly and serve as desired.
