Description

Making Homemade Granola isn’t so bad. Try this Homemade Granola recipe with fresh tropical fruit and vanilla greek yogurt.


Ingredients

  • 2 1/2 c. Rolled Oats
  • 1 1/2 c. chopped pecans
  • 1 c. sliced almonds
  • 1/2 tsp.cinnamon
  • pinch of salt
  • 1/2 c. honey
  • 1/4 c. vegetable oil
  • 1 c. dried papaya
  • 1 c. golden raisins
  • 2/3 c. toasted coconut flakes
  • 1/2 c. maple syrup
  • 2 c. pineapple, diced
  • 4 kiwi, peeled and diced
  • 2 mangoes, peeled and diced
  • 2 c. papaya, diced
  • Vanilla Greek Yogurt

Instructions

  1. Preheat oven to 225 Degrees. Place a silicone mat or large sheet of parchment paper on a large baking sheet.
  2. In a large bowl, add the rolled oats, chopped pecans, sliced almonds, cinnamon, and a pinch of salt. Toss together. In a medium sized bowl, mix together the honey and vegetable oil; pour on top of the oat mixture. Mix until the mix is well coated. Spread the granola evenly among the baking sheet for even baking. Place in the oven for 30 minute while flipping mixture with a spatula half way through.
  3. At 30 minutes, turn off the oven but leave granola inside and checking every 10-15 minutes. If it appears to burn, remove from the oven. Leave granola inside until oven is cool. Turn the granola to a large mixing bowl and add the dried papaya, golden raising, and coconut shavings. Toss well to combine well. Finally add the maple syrup and toss. Lay back on the sheet to allow the syrup to dry out for, about 30 minutes or so. Turn to a large container and store in a dry place.
  4. To make the parfaits, toss the diced fruit in a larger tupper ware container and layer with yogurt and granola to your liking.
