Units Scale
  • 8 oz. kale, cleaned (half bag of a full bag of kale)
  • 8 oz. broccoli slaw (store-bought)
  • 2 Small Green Apple, de-seeded and diced
  • 1 cucumber, diced
  • 1/3 c. pumpkin seeds
  • 1/3 c. dried cranberries
  • 1/4 c. green onion, chopped
  • 1/2 c. extra virgin olive oil
  • 1 tbsp. Dijon mustard
  • 1/3 c. honey
  • 1 1/2 tbsp. Apple cider vinegar
  • 1 tsp. Dried oregano
  • Salt and pepper, to taste


  1. Use a food processor, add the kale, and pulse until shredded, similar to confetti. Don’t pulse too much to where it becomes pasty. Do the same with broccoli slaw. Add them both to a large bowl.
  2. Skin the apples and cucumber and dice into small square pieces. Add them to the bowl, along with the remaining ingredients ( pumpkin seeds, dried cranberries, and green onion), and toss.
  3. In a large measuring cup or medium-sized bowl, add the extra virgin olive oil, dijon mustard, honey, apple cider vinegar, and dried oregano and mix until well combined. Add salt and pepper to taste. Toss the salad with the dressing entirely or individually. Serve as desired.
