Description

Ingredients

  • 12 Ripe Peaches
  • 1 c. sugar
  • ¼ c. brown sugar
  • 2 tsp. Vanilla extract
  • 1 ½ tsp. Cinnamon
  • 2 tbsp. cornstarch
  • 2 tbsp. water
  • 1 ½ c. flour
  • 1 ½ c. sugar
  • 1 ½ sticks unsalted butter, cold and cubed
  • ½ tsp. Salt
  • c. cold water

Instructions

  1. Preheat to 375 Degrees
  2. Carefully peel the peaches with a paring knife. The more ripe the peaches are the easier it should be to peel the skin off with your fingers after the initial first slit. Once the peaches have been peeled, slice the peaches into long slices and discard the pit. Turn the sliced peaches to a bowl.
  3. Add both sugars, vanilla extract, cinnamon and toss together. Mix the cornstarch and water in a small ramekin and mix until cornstarch has dissolved. Pour and toss in with the peaches.
  4. Pour the peaches into a 9X13 casserole dish. In a separate bowl, add the flour, sugar, salt, and butter. Mix the flour mixture together with a pastry cutter, fork, or work through very quickly with your hands. Add the cold water and the dough will look crumbly. Sprinkle the dough across the top of the cobbler and bake in a preheated oven for 40-45 minutes until the top is slightly golden brown. Allow to cool and serve with ice cream, if desired!
