Description

This pancakes are packed with protein and fiber and only requires one thing…a food processor. Just top off with favorite fruit and maple syrup and you have yourself an awesome breakfast.


Ingredients

Scale
  • 1 c. Oat Bran
  • 1 c. Whole Grain Pancake Mix
  • 1 tbsp. flax meal
  • 2 tbsp. protein powder (vanilla or plain)
  • 1/2 banana
  • 2 tbsp. honey
  • 1 tsp. vanilla extract
  • 1 1/4 c. egg whites
  • pinch of salt
  • butter for frying
  • fruit for topping

Instructions

  1. Using a food processor, combine all ingredients (oat bran, whole grain pancake mix, flax meal, protein powder, banana, honey, vanilla extract, egg white, and pinch of salt). Pulse until well combined and smooth, about 1 minute.
  2. *If you do not have a food processor you can use a blender.
  3. Heat a griddle or pan on medium heat and add a tablespoon of butter. Once the butter has melted, pour 1/4 cup of pancake batter on griddle and use the back of a spoon to widen the circle of the pancake by moving in a circular motion onto the pancake batter. Allow to cook until bubbles begin to form along the edges and the middle of the pancake and flip onto the other side to finish cooking, another minute. Repeat until all batter is used. Top with desired fruit and enjoy!
