Pumpkin Liege Waffles

Ingredients

  • 3 1/2 c. flour
  • 1 packet Active Yeast
  • 3/4 c. milk, warm
  • 2 sticks of butter, browned
  • 2 eggs
  • 1/2 tsp. salt
  • 4 tbsp. pumpkin puree
  • 1 1/2 tsp. pumpkin spice
  • 8 oz. package Pearl Sugar

Instructions

  1. In a large bowl of a standing mixer, dissolve the yeast with warm milk. Allow to sit for about 5 minutes. Attach the dough hook to your mixer and turn on low. Slowly add 3 cups of flour one at a time. Add the eggs, softened brown butter, salt, pumpkin puree, and pumpkin spice. Once the ingredients are well incorporated add the last ½ cup of flour. Leave in bowl, place dish towel on top, and sit in warm place for about 1 hour and until the dough has doubled in size.
  2. Once the dough has double in size, stir in the pearl sugar. Turn on the waffle maker and place on high heat according to manufacturer’s instructions. Spray with non-stick baking spray. Take about 1/3 cup of dough and place on the waffle maker and allow to cook for 3-4 minutes until sugar has slightly caramelized and turn golden brown. The outside will be crisp but the inside will be soft. Repeat until all dough is cooked. Serve as is or with maple syrup.
