- 2 lbs. Boneless Skinless Chicken breasts, diced
- 2 tbsp. olive oil
- 2 garlic cloves, minced
- 4 c. chicken broth
- 8 oz. Angel hair pasta. broken in half
- 6 oz. Bag baby spinach
- 1/2 c. heavy cream
- 1/2 c. sun-dried tomatoes packed in oil drained, and chopped
- 1/4 c. grated parmesan, plus extra for serving
- 1/4 tsp. Red crushed pepper flakes
- 1/2 tsp. Garlic powder
- 1/2 tsp. Onion powder
- Salt and Pepper to taste
- Garnish: Fresh chopped basil
Instructions
- Begin by seasoning the chicken with salt and black pepper.
- Heat the olive oil over medium-high heat in a large skillet or Dutch oven.
- Sauté the garlic in the heated oil for about 30 seconds until it becomes fragrant.
- Add the chicken cubes to the skillet and continue to sauté until they turn a nice brown color, which usually takes around 5 minutes.
- Pour in the chicken broth and bring it to a simmer.
- Stir in the angel hair pasta, cover the skillet, and let it cook for about 4 to 6 minutes. Always stir occasionally to ensure that the chicken and pasta are thoroughly cooked. You can check if the chicken is done using a meat thermometer inserted into the center, ensuring it reaches 170°F.
- Take the skillet off the heat and add the spinach, heavy cream, sun-dried tomatoes, Parmesan cheese, and the seasonings (red crushed pepper flakes, onion powder, garlic powder, salt, and pepper to taste). Stir all the ingredients together.
- Serve this delicious dish with some crusty bread and a refreshing side salad.
