Ingredients

  • 2 tbsp. olive oil
  • 1 medium onion, peeled and diced
  • 3 garlic cloves, minced
  • ½ c. green peppers
  • 4 Roma Tomatoes, diced
  • 10 oz. meatless crumbles
  • 2 tbsp. Worcestershire Sauce
  • 1 Zucchini, diced
  • 6 oz. Tomato Paste
  • 15 oz. Hot Chili Beans
  • 15 oz. Tomato Sauce
  • 15 oz. Sweet Corn
  • 15 oz. Black Beans, rinsed and drained
  • 1 c. water
  • 1.25 oz. chili flavor
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • salt and pepper to taste

Instructions

  1. In a large sauce pot on medium-high heat, add the olive oil. Once heated, add the chopped onion, peppers, and cook for 3-5 minutes until the onions are soft and translucent. Add the garlic and zucchini and cook for an additional 5 minutes.
  2. Add the Roma tomatoes and meatless crumbles. Stir in with the rest of the veggies. Add the Worcestershire sauce and tomato paste. Stir the ingredients. Add the chili beans, tomato sauce, sweet corn, black beans, and water. Stir together. Add the chili flavor, onion and garlic powder, and salt and pepper to taste. Turn the heat on simmer to low and cook for, at least 30 minutes.
