Ingredients — For the Meatballs

  • lbs ground turkey (93% lean)
  • ½ cup plain breadcrumbs
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp cumin
  • 2 tbsp extra virgin olive oil (for browning)

  • 3 tbsp butter
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 3 cups chicken stock (or water)
  • ½ cup sour cream
  • ½ tsp ground cinnamon
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and pepper, to taste

  • Mashed potatoes or egg noodles
  • Fresh chopped parsley

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, Worcestershire sauce, salt, pepper, garlic powder, onion powder, smoked paprika, and cumin. Mix by hand just until combined, about 30 seconds. Don’t overmix.
  2. Using a 1-tablespoon cookie scoop, shape into 24–28 meatballs, about 1 inch each. Wet your hands to prevent sticking.
  3. Heat olive oil in a large skillet over medium heat. Working in batches so you don’t crowd the pan, brown the meatballs on all sides, about 8–10 minutes total. They won’t be fully cooked yet — they’ll finish in the gravy. Remove and set aside.
  4. In the same skillet (don’t clean it), sauté the onion and garlic 2–3 minutes until fragrant. Add butter; once melted, sprinkle in flour and stir constantly 2–3 minutes to form a roux.
  5. Gradually whisk in the chicken stock, scraping up the browned bits. Simmer 5–7 minutes until thickened.
  6. Reduce heat to medium-low. Stir in sour cream, cinnamon, cumin, smoked paprika, and onion powder. Taste and adjust salt and pepper.
  7. Return the meatballs to the skillet, nestling them into the gravy. Simmer 5 minutes, until cooked through (165°F internal).
  8. Serve over mashed potatoes or egg noodles, garnished with parsley.

Notes

  • Crockpot method: Brown the meatballs, add them to the slow cooker with the gravy, and cook on LOW 3–4 hours or HIGH 1.5–2 hours. Stir in the sour cream during the last 20–30 minutes so it stays silky.
  • Storage: Keep meatballs and gravy together up to 4 days in the fridge or 3 months in the freezer.
