Description

This Easy Cherry Cobbler Recipe is made with frozen cherries but can be made with fresh cherries also. The crust is a biscuit-like topping.


Ingredients

  • 2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 c. + 2 tbsp. sugar (more for sprinkling)
  • 1 1/4 c. heavy cream
  • 4 tbsp. butter, melted
  • 24 oz. frozen dark cherries
  • 1/2 c. sugar
  • 2 tbsp. corn starch
  • 1 tbsp. lemon juice
  • 1 tbsp. lemon zest

Instructions

  1. Preheat oven to 350 Degrees
  2. In a large bowl, combine the dry ingredients (flour, baking powder, sugar, and salt) and whisk together. Make a well in the middle of the bowl and pour in the heavy cream. Mix the mixture with both of your hands until a big ball of dough forms and set aside.
  3. In a separate large bowl, pour in the frozen cherries, add the sugar, corn starch, lemon zest, and lemon juice. Mix thoroughly with a wooden spoon until all sugar and cornstarch is sticking to the cherries. Pour into a 9X9 square glass dish.
  4. Take pieces of the dough and form into medium patties and place across the top of the cherries. Brush the top of the biscuits with the melted butter and sprinkle with sugar. Place in the oven and allow to bake for 30-35 minutes or until the tops of the biscuits are slightly golden brown. Allow to cool before serving.
