Ingredients

  • 1 c. unsweetened cocoa
  • 1 c. flour
  • 1 ½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 1 ¼ c. buttermilk
  • ½ c. vegetable oil
  • 1 c. Stonyfield plain greek yogurt
  • 7 oz. Divine Dark Chocolate, melted
  • ICING
  • 1 stick butter, softened
  • 6 c. powdered sugar
  • 1 tsp. salt
  • ¼ c. heavy cream
  • 7 oz. Divine Dark Chocolate, melted

Instructions

  1. Preheat oven to 350 Degrees and spray heavily or line two 9 inch round cake pans and set aside.
  2. In a large bowl, sift together the cocoa, flour, baking powder, baking soda, and salt. In another large bowl, mix the sugar, eggs and vanilla extract; add the buttermilk and oil.
  3. One cup at a time, begin to add the dry ingredients to the wet ingredients make sure each cup is well mixed before adding the next cup. Once the dry ingredients have been added to the wet ingredients, add the melted chocolate and stir until well mixed. Finally add the yogurt and stir.
  4. Pour even distributions of cake batter into the cake pans. Bake on the top oven rack for 20-25 minutes. Once finished, allow to cool for 5-10 minutes and turn to cooling rack and allow to completely cool.
  5. To make the icing, blend the butter in a large bowl until creamy. Add the powdered sugar 1 cup at a time while adding 1 tbsp. of cream in between. If the icing isn’t as creamy as you prefer add 1 tbsp. of cream at a time until desired consistency is reached. Add the melted chocolate and mix until well blended and creamy. Frost the cake as desired.
