- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 1/2 c. sugar
- 1 stick unsalted butter, softened
- 1 c. pure canned pumpkin
- 1 large egg
- 1 tsp. vanilla extract
- FILLING
- 1/3 c. unsalted butter, softened
- 2/3 c. marshmallow fluff
- 2/3 c. powdered sugar
- pinch of salt
Instructions
- Preheat oven to 350 Degrees
- In a large bowl, whisk together all the dry ingredients, flour, baking soda, baking powder, cinnamon, nutmeg, salt, and sugar. In a separate bowl, beat together the butter, pumpkin,egg, and vanilla extract and slowly blend in the dry ingredients until well mixed. Spray a cookie sheet with baking spray and drop rounded tablespoon cookie batter on the sheet and bake for 10 to 12 minutes. Allow to cool completely.
- To make the cream, beat together the butter, marshmallow, powdered sugar, and salt until it is a cream. Spread the cream on one of the cookies and place the other cookie on top making a sandwich and serve.
