Pumpkin Sandwich Cookies


  • 2 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 1 stick unsalted butter, softened
  • 1 c. pure canned pumpkin
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1/3 c. unsalted butter, softened
  • 2/3 c. marshmallow fluff
  • 2/3 c. powdered sugar
  • pinch of salt


  1. Preheat oven to 350 Degrees
  2. In a large bowl, whisk together all the dry ingredients, flour, baking soda, baking powder, cinnamon, nutmeg, salt, and sugar. In a separate bowl, beat together the butter, pumpkin,egg, and vanilla extract and slowly blend in the dry ingredients until well mixed. Spray a cookie sheet with baking spray and drop rounded tablespoon cookie batter on the sheet and bake for 10 to 12 minutes. Allow to cool completely.
  3. To make the cream, beat together the butter, marshmallow, powdered sugar, and salt until it is a cream. Spread the cream on one of the cookies and place the other cookie on top making a sandwich and serve.
