Description

Protein packed salad filled with juicy steak, smoked Gouda, crunchy cucumbers, and Sweet Vidalia Onion Dressing!


Ingredients

Scale
  • Dressing
  • 1 medium Vidalia Sweet Onion, diced
  • 2 tbsp. olive oil
  • 1/4 c. Olive Oil
  • 6 tbsp. apple cider vinegar
  • 2 tbsp. honey
  • 1 1/2 tsp. dry mustard
  • 2 garlic cloves, grated
  • 1/2 tsp. celery seed
  • 1 1/2 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Salad
  • 2 oz. Spring Salad Mix
  • 2 eggs, boiled and sliced
  • 56 Cucumber slices
  • 2 tbsp. toasted pecans & cranberries
  • 2 tbsp. Smoked Gouda cheese
  • 2 oz. Steak Sirloin
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tbsp. olive oil

Instructions

  1. Using a medium saute pan, heat the 2 tablespoons of olive oil on medium heat. Add the onions to the pan and allow the onions to caramelize until golden brown, about 10-12 minutes. Once the onions have caramelized, set aside and allow to cool.
  2. Using a food processor, add the onions, vinegar, honey, dry mustard, grated garlic cloves, celery seed, Dijon mustard, salt, and pepper. Pulse the ingredients and slowly pour in the olive oil. If the dressing is too think for your liking, continue to pour little amounts of oil to thin the dressing.
  3. Pour dressing in a an air tight container until ready to serve.
  4. Sprinkle the 2 ounce steak with salt and pepper on both sides. Using another medium saute pan and place on medium to high heat and add 2 tablespoons of olive oil. Sear the steak for 3-5 minutes on both sides. Allow the steak to rest before slicing.
  5. Place the greens on a plate, slice the hard boiled eggs and place on greens, add the sliced steak, cucumbers, Gouda cheese, and sprinkle with pecans. Finally, pour the Vidalia Onion Dressing on top and enjoy!
