When I was a kid, meatloaf was one of my all-time favorite meals. My mom would make meatloaf, peas and carrots, and mashed potatoes as staple meal. It was almost as predictable as the weather in some parts of Florida. You always knew it was going to be good and perfect. I actually would look forward to this meal. I think it is just one of the meals in my family that left everyone feeling satisfied. Not to mention, it was one of the only meals my mom could not mess up. Now I make meatloaf when I can. My husband doesn’t like it, so I don’t make it often. But you better believe when I start having children that my kids are going to find the same appreciation for this Bacon Cheeseburger Meatloaf Recipe as I did.
I have actually gotten pretty creative with meatloaf now a days. Especially in this Bacon Cheeseburger Meatloaf Recipe. I have made turkey meatloaf with feta, spinach, and diced tomato. I have also made regular meatloaf but with turkey and spicy sausage. I try to change it up when I am inspired. Let me tell you, with my variations of meatloaf and my mom’s standard recipe, none of those holds a candle to this Bacon Cheeseburger Meatloaf Recipe. Nope! Not even close. This meatloaf recipe is incredible!
There are so many great things about this recipe that just works together. You have all the spices in the meatloaf, the ketchup and Worcestershire Sauce that add moisture and more flavor to the meatloaf; the bacon that just takes it over the top; and of course the cheddar cheese that makes “foodgasmic” (yea I made that up). I am totally making this recipe for my kids! I’m kind of scared though. If my kids eat this meatloaf first, they won’t want any other meatloaf recipe because it is that good! All you need to make this a complete meal is a delicious side dish and Pillsbury Crescent Rolls and you have one comforting meal.
