When accounting for someone’s weight gain there are several different causes. Some people can’t resist desserts; some people love burgers and fries; and there are some people, such as myself, that love Italian Food. Every time I eat a wonderful Italian dish I come to understand why Italians are so happy and talk with their hands all the time. It’s because their mouths are full of delicious food and they have no other choice but to use their hands to communicate. Complete side note, it is my retirement goal to live in Tuscan Italy. It just seems like a wonderful place to live. Maybe I should visit first.

Until now, I have never had Chicken Cacciatore but let me tell you how amazing this dish is. First of all, it is perfect for colder months. Why do you wonder? That is because it is basically a chicken stew. A chicken stew with delicious plum tomatoes, an amazing pepper flavor, and you can serve it over your favorite pasta. This will go well with jumbo pasta such as rigatoni, egg noodles, or, in my case, I used tortellini. Basically, it’s like a bigger rigatoni pasta. I love big pasta because they are such fun to eat for me for some reason. Actually, I could eat a big bowl of pasta drizzled in olive oil, salt, garlic, oregano, topped off with some freshly grated Parmesan and I am a happy girl. But I am happier to have this Chicken Cacciatore dish on top of pasta instead. Give it a try and you will too!
