I am so in love with these Easy Mexican Chicken Taco Boats! I’ve made this dish twice already!
Let me tell you a little bit about my day to day lifestyle…. its boring! However, I do have a career aside from being a food blogger and that is working as a recruiter for a public university in my area. Although I mostly work from home, my job gets busy where I am talking to potential students, attending meeting, responding to 100 emails a day, returning about 50 voicemails, having to come up with best practices and procedures, review transcripts and the list goes on! I get so busy with my job I forget to eat. Although I do not know how that is possible but it happens. In between doing my job I actually take the time to run the vacuum and maybe wash a few dishes and then I get right back to work. Around 2-3pm I start to figure out what I am going to make for dinner and still do my job. Geesh, I know it’s a lot and I am sure it doesn’t even compare to some of you who have more hectic lifestyle schedules. I said all of that to say, thank God for this dump meal.
I absolutely love this dish provided by Pillsbury. You literally just dump all the essential ingredients in a crock pot and go about your business. Once the chicken is finished all you have to do is put it in in El Paso’s Soft Tortilla Boats. Now, this is not this is not the first time you have seen a recipe like this. I love El Paso Soft Tortilla Boat and you probably remember seeing them in my Slow Cooker Beef recipe where I almost did the same thing that I did with this recipe. The only exception is there is no rice in that one like there is in this recipe. In any case, the result is the same…deliciousness.
Let me give you some pointers, once you put all the ingredients in the crock pot, go ahead and get some plastic containers out and chop up your lettuce, tomatoes, avocado, beans, onions, jalapeno, or whatever else you want to put on your boats and place them in the refrigerator so when the crockpot meal is complete, all you have to do is pull out your containers and let everyone make their boat however they want to make it float. Get it? Anyway, this is really an awesome Dump Crockpot Meal that you will add to your regular rotation of dinner choices for you and your family.
