I am such a mommy’s girl.
I love listening to my mom tell stories of when she was pregnant with me. I think it is pretty cool. From what I have been told, my mom had a fairly easy pregnancy with me until about a month before I was born. My mom, somehow, got sick with pneumonia. Yikes! Her illness somehow caused her to deliver me 1 month early. Yep I was a tiny. Born only a mere 5 lbs. I had to be placed in an incubator for a little while until it was determined that I was a happy and healthy baby. In the end I was a happy and healthy baby who became spoiled rotten by her grandmother (Love You Grandma).
While my mom was pregnant with me she was overwhelmed with cravings. Her biggest craving with me was eating Reese’s Peanut Butter Cups and Bananas. Also, she ate peanut butter sandwiches with banana slices. Pretty much, peanut butter and bananas was my mom’s thing during her pregnancy. I made this panini with her in mind. I am sure that if my mom new about this sandwich when she was pregnant, she would’ve been all over this sandwich. Heck, she probably will still eat it now. In fact, I know there are several of you out there who are drooling over this sandwich. Let me tell you, it-is-good. I am not a huge banana and peanut butter person, but this sandwich really makes me a believer.
I found some chocolate swirl bread was perfect. I didn’t want to use simple and plain white bread, I’m sure you could if you wanted but I thought it would be weird. Feel free to use whatever sweetened bread you’d like.
