Bruschetta Recipe with Bacon and Peaches

Who would’ve ever thought bacon and peaches would go well together in this Bruschetta Recipe?

I am all about a good bruschetta recipe and bacon. My husband, on the other hand, is not a pork eater, but I am a proud bacon lover. In fact, I think most of the citizens in American would consider themselves bacon loves. In fact, I think we may the only country that has developed a lot of the bacon combination that most of us have seen. Let’s see there is chocolate covered bacon; there is bacon on donuts; and there is bacon in cookies. You see, there is bacon everywhere now a days. There is even bacon mixed with fruit. Do you know what I mean? No? Well let me tell you.
I love appetizers. I love peaches. I love bacon. I was thinking, why not mix those concepts together? I wanted to make an easy appetizer that would be perfect all year long. What is easier than a good ole bruschetta recipe? Obviously, unless you live somewhere where peaches are in season all year long and you decide to make this recipe in an off season, you will have to use a different type of fruit. You can use apple, pineapple, and maybe even grapes (if you try grapes let me know how it comes out). However, this recipe just doesn’t work without peaches. It just taste amazing! Who would’ve ever thought that peaches and bacon would work well together? Well, it does! I also used my new secret ingredient to bring it all together and that is Hot Pepper Jelly! I used Hot Pepper Jelly in a recipe for my e-book and I feel in love with it. I was a bit nervous about it but Hot Pepper Jelly is amazing. Hot Pepper Jelly comes across as a southern delicacy. It seems as though it is one of those condiments that everyone will have and they only open on Sundays over a large brunch or breakfast. I see ham steaks, fried eggs, huge pillowy buttermilk biscuits, and this jelly on the table. Don’t you see it?! It is so good and it is the perfect combination of sweet and savory. You must try it if you haven’t already.
To take this appetizer to another level I topped these Bacon and Peach bruschetta pieces with Kraft Hot Habanero Cheese. This cheese is spicy and creamy which works well with the other elements of this dish. Let me tell you what you will experience when you bite into one of these beauties. You will have the crunch of the baguette, the sweet and spicy of the bacon and peach mixture; and with all that flavor the Hot Habanero cheese comes in and calms things down but then lives you with another kick! Now I know peaches are no longer in season in some parts, but what I want to challenge you to do is get creative. Use apples or blueberries! Allow yourself to become undone and really explore the combinations of different flavors. That is how amazing dishes are created. You have to let the the filter go. Now I know there are a lot of holiday parties coming and New Years parties. Try this and wow your guests!

Description
This appetizer dish is taking Bruschetta to a whole new level by combining peaches and bacon. This can go with just about any fruit that is in season!
Ingredients
- 12oz. bacon, diced
- 1 1/4 c. fresh peache2, diced
- 1/2 c. shallots, diced
- 2 heaping tbsp. hot pepper jelly
- 1/2 tsp. red pepper crushed flakes
- 1/2 tsp. liquid smoke (optional)
- 4 oz. Kraft Hot Habanero Cheese, large shards
- 2 tbsp. olive oil
- 24 Baguette slices
- Chives for garnish
Instructions
- Place the bacon inside a medium sauté pan on medium heat. Cook until browned and slightly crisp, about 10 minutes. Drain the excess fat and return bacon back to the pan.
- Add the peaches and diced shallots. Allow to cook for about 5 minutes until peaches and shallots are soft. Finally add the red pepper jelly, crushed pepper flakes, liquid smoke and stir until jelly has completely dissolved. Turn on low heat.
- Brush the baguette slices with the olive oil and sprinkle with a little sea salt. Place in a preheated oven on 350 degrees a baking sheet for 5-7 minutes. Remove from the oven and spoon about 1 tablespoon of the bacon mixture on top of the sliced Baguettes; sprinkle with chives, and top with Kraft Hot Habanero Cheese.
