Crispy Chicken Buffalo Sandwich

This Crispy Buffalo Chicken Sandwich is perfect for weekend cooking!


Can I tell you a secret? I struggle with cooking on Fridays and Saturdays. In fact, it is almost a miracle if I cook dinner at all on either of those days. I guess it’s because it’s the end of the week and I am kind of tired of doing household things by that time and I am ready to relax. Typically we go out to eat or order take out. But it can get pretty expensive. Ordering take out or going out to eat for just about every meal over the course of two days adds up so I figured I need to do something different to keep money in our pockets. I need to come up with something that is easy and quick to eat on the weekends. So I thought about it, “What can I make on the weekend that is easy and isn’t complicated?” I ran through a lot of options: hamburger, nachos, chicken nuggets, pizza, or grilled cheese sandwiches. You know, something that is easy and isn’t complicated.

Crispy Chicken Buffalo Sandwich

My husbands favorite dish is Fried Chicken. But his absolute favorite dish next to that are Buffalo Chicken Wings. He loves them so much I hate them. I say that because that is how often he eats them. I swear when I was pregnant last year, the smell of Buffalo Chicken Wings would seriously gross me out. I could smell every spice and all the vinegar. Nevertheless, the smell and taste buds did go back to normal and the smell doesn’t bother me as much now, but I do get sick and tired of seeing them. So, to compliment my husband and what he really likes (Buffalo Chicken Wings) and turn it into a sandwich. This Crispy Buffalo Chicken Sandwich is the perfect marriage of what he likes and what I like. You see, I really do enjoy a good Crispy Chicken Sandwich. It was a great compromise and an excellent choice!

This Crispy Buffalo Chicken Sandwich is not only an easy recipe, but a delicious sandwich. You can make these as a whole sandwich or you can make them as sliders! They are perfect to make for weekends and weeknight dinners, tailgate or sport parties. I have found the best solution to my weekend dinner meals. I hope I have given you an idea if you struggle with what to cook toward the end of the week as well. Enjoy this Crispy Buffalo Chicken Sandwich! Just serve on a potato bun and crumbled blue cheese!

Ingredients
  • 4 Thin Chicken Breasts
  • 2 c flour
  • 2 tbsp. Corn starch
  • 1 tsp. Salt
  • 1 tsp. pepper
  • 4 whole eggs
  • Vegetable oil
  • 12 oz. Buffalo Wing Sauce
  • Blue cheese crumbles
  • Potato buns
  • Lettuce
Instructions
  1. Using a heavy metal shallow skillet, fill with vegetable oil ⅔rds full. Place on medium high heat. Meanwhile, in a separate bowl, whisk together flour, cornstarch, salt and pepper. In another bowl, whisk eggs until yolks and whites have combined. Pour buffalo sauce in a bowl or container that is big enough to dip the chicken breasts and set aside.
  2. Dredge the chicken breast through the flour mixture on both sides, shake off excess; dredge through the egg mixture on both sides, shake off excess; and dredge through the flour mixture again on both sides and shake off excess. Place in hot oil and cook on both sides for 7-10 minutes on each side, just until gold brown. Remove from heat using tongs and place on plate lined with paper towel and turn on both sides to remove excess oil and while still hot, dredge through buffalo sauce on both sides and place on cooling rack.
  3. Once chicken is finished, serve on potato bun with butter lettuce and bleu cheese crumbles to preference.
