I am a working mom. Which means, from 5:30 am until about 9 o’clock pm, I am going, going, going. I have a very small window of opportunity to make a, somewhat, wholesome and delicious meal that doesn’t repeat itself 5 days a week. Don’t get me wrong, my crockpot and I are best buds. But me being me, sometimes I actually do like to cook a meal. You know, chop some veggies, listen to something sizzle, and smell garlic in the air. I love cooking that much and to only do crockpot meals 5 days a week would be horrible for me. Although, it is awesome to put something in the crockpot for hours, come home after a long day of work and smell the aroma from that dish in the air too. That is the “bees-nees”. Sometimes, you just want to get in front of your stove and make something amazing.
Before I continue, let me just say something about working moms. Simply, this shit is hard! Let me tell you how a typical weekday goes for me:
5:30 am- Get up for work.
6:15 am- Get the kid up for daycare.
6:50 am-7:00 am- Get in the car.
7:15 am- Drop the kid off at daycare.
8:00 am- Get to work
12:00 pm -Workout at work (ME TIME)
5:00 pm- leave my office
5:35 pm- Pick up the kid and fight him to put his coat on.
6:00-pm- Get home
6:10 pm- Feed the kid…something
7:15 pm- Get the kid ready for bed
8:00 pm- Kid is finally sleep
Now, with a schedule like that, when in the hell do I have time to cook? I’ll tell you, I might put something together in that small time frame between 6:10 pm and 7:15 pm. Even if I do that, I have to act quickly and always keep my eyes on my shoulder because toddlers can’t be trusted. Therefore, the meals I make are sometimes rushed and often accidental by the outcome. My meals are either incredibly delicious or just average. I know you are probably thinking that because I am a food blogger that the food that hits my table is always delicious and what not and that is not true. I burn cakes, burn toast, under season, and over season my food all the time. In fact, there are so many dishes I have made an effort to share them with you guys that never hit the blog because they come out as catastrophe more often than not. However, in the case of this Chicken BLT Cheese Tortellini Pasta, this was an accident that I am very proud to share.
Okay, so this dish happened by accident. I love tortellini pasta. It is one of my favorites. So, in my kitchen, I had some tortellini, chicken, and some other stuff and I thought it was a good idea to just throw them in a pan and let the food magic take its course. Boy was I right! I made a simple sauce out of some heavy cream and parmesan cheese. My favorite part of this Chicken BLT Cheese Tortellini Pasta dish is the bacon. The bacon fills the dish with amazing flavor and seasoning. The smokiness of that bacon just makes this dish over the moon good! The cheesy bite of the tortellini and the sweetness from the tomatoes are incredible. If you prep the dish the night before by cooking the chicken, dicing the tomatoes, and mincing the garlic, you can definitely have this dish in about 30 minutes. Also, prep a salad the night before but DO NOT dress your salad or it the lettuce will wilt and you won’t want to eat that. While you are cooking your dinner, warm up some bread and although you may have had a busy day, this meal will come across like you did not.

Enjoy this Chicken BLT Pasta Dish made with tortellini, chicken, bacon, cherry tomatoes, and baby spinach made in an easy cheesy cream sauce.
Ingredients
- 2.5 lbs chicken, cooked and diced (about 3 large chicken breast)
- 1-pint cherry tomatoes halved
- 5 oz. baby spinach
- 3 oz. bacon bits (cooked and chopped or store bought)
- 3 garlic cloves, minced
- 1 tbs. Olive oil
- 2 ¼ c. heavy cream
- 2 c. parmesan cheese, finely grated
- 1 lb. Three Cheese Tortellini
- 5 leaves basil, finely chopped
- Salt and pepper to taste
Instructions
- Using a large saute pan and warm on medium heat. Add the olive oil and once warmed add the cherry tomatoes and cook until softened, about 3-5 minutes. Add the minced garlic and cook for an additional 3-5 minutes.
- Add the heavy cream and parmesan cheese and stir until cheese has melted. Meanwhile, fill a large pot with salted water and bring to a boil. Add the tortellini and cook for 7-10 minutes. Drain the tortellini.
- Carefully add the chicken, drained tortellini, and bacon to the sauce. Finally, carefully add the baby spinach and fold into pasta. Cover with lid to allow the spinach to wilt. Season with salt and pepper to taste. Sprinkle with chopped basil and serve.
- NOTE: Feel free to add more cheese and a touch of cream if desired.
