So I am about to make you paranoid about something. Are you ready?
Two days ago one of my close friends asked me if I heard in the news about a woman being hospitalized for eating salad from a bag. I told her “no” but was interested in how she became hospitalized from eating salad from a bag. My friend proceeded to tell me that the lady had been hospitalized because traces of rat urine was found on the bag. That is when I said “Alrighty then. I will no longer eat salad from a bag”. Now I bet you will never look at a bag of salad the same. But FEAR NOT faithful blog followers. This salad is not from a bag. The ingredients from this salad has been hand-picked and thoroughly rinsed for your visual pleasure.
I fell in love in Greek Salad when I had it at Pappadeux Seafood Kitchen, which is my favorite restaurant. They make the dressing in house and it is so tasty. Its fresh, crisp, and very delightful. It also goes well with some warm french bread…with butter…dripping on the sides…sopping the bread in the dressing…Oh! I’m sorry. I had dejavu for a second. If want some extra protein you can add some chicken pieces or cold boiled shrimp. However you want it just enjoy it!
Greek Salad and Homemade Greek Dressing
Ingredients

- 1 head fresh romaine lettuce, cut and rinsed
- 1 c. red onion, diced
- 1 c. green bell pepper
- 1 whole cucumber, sliced
- 1 whole tomato, diced
- 2 stalks celery, diced
- 4 oz. crumbled feta cheese
- 2 tbsp. capers
- 1.4 c. black olives, sliced
- 1/2 lemon. squeezed
- Dressing
- 1 1/4 c. olive oil
- 1/4 c. red wine vinegar
- 1 tbsp. honey dijon mustard
- 2 cloves garlic
- 1 tbsp. sea salt
- 1 tbsp. pepper
- 1 tbsp. dried oregano
- 1 tbsp. dried basil leaves
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tbsp. lemon juice
Instructions
- This is very easy: Cut and rinse thoroughly the romaine lettuce. Make sure that you do your best to drain the excess water. I have a salad spinner and it worked wonderfully. Add your lettuce to a large bowl. Add the rest of the ingredients to the bowl ( red onion, green bell pepper, cucumber slices, tomato, celery, feta cheese, capers, and black olives). With tongs, toss all the ingredients.
- DON’T USE THAT LEMON YET
- In a food processor, blend all the ingredients for the dressing. Taste to make sure that it is seasoned to your liking. Squeeze the half lemon on the salad and drizzle the salad with some of the Greek dressing and toss. Serve with warm french bread.
