I know I am trying to justify just about every unhealthy thing I eat. But this coffee cake recipe has berries so that makes it easy to do so with this recipe. Really I can! Think about it, berries have fiber, vitamins, and antioxidants. See, it’s healthy! Therefore, this cake has 1 serving of fruit! I know you were looking at this counting the calories you will consume and how much you have to work out to burn off the cake but I just helped you out so you don’t have to feel so bad. I know…I love you too.
I normally don’t eat coffee cake. Not because I don’t like it, I just don’t for some reason. I know you guys are looking at my blog wondering how I am not huge or what I do with most of my food, right? Well, I will tell you. I recently had a physical and, yes, I gained some weight so I things like this cake I have to avoid eating completely. I have enough of a bite so I can decide if it is blog-worthy or not, but that is it. I am staying away from sugar and working out 5 days a week. But, when I make recipes like this delicious coffee cake, I honestly don’t care to try it because I get enough fulfillment just from baking gorgeous desserts like this coffee cake.
I know that may sound like a bunch of malarkey but it is the truth. When I make sweets I usually am going somewhere or making them for someone. I strategically have to plan when I make my sweets so I don’t get tempted. That is how I do that. The dinner meals are actually my dinner.

Ingredients
- For crumble topping:
- 1/3 c. sugar
- 1/3 c. brown sugar
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 stick butter, melted
- 1 1/2 c. flour
- For Cake:
- 3 c. flour
- 1 c. brown sugar
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 1 /2 c. milk
- 2/3 c. canola oil
- 4 large eggs
- 1 1/4c. diced strawberries
- 1 1/4 c. blueberries
- *Powdered sugar for dusting
Instructions
- Preheat oven to 350 Degrees: Grease or spray a 9X13 baking pan and set aside.
- In a medium bowl, combine both sugars, cinnamon, salt, and melted butter. Use a rubber spatula to mix together. Pour in the flour and stir until crumbly. Turn the crumble to wax or parchment paper, spread evenly, and allow to sit for 15 minutes before applying to coffee cake.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix together the brown sugar, milk, eggs, and oil. Blend in the flour mixture with the liquid mixture until smooth and well mixed.
- Pour half of the batter in the baking pan, sprinkle with the blueberries and strawberries, pour the other half of the batter on top of the berries. Sprinkle the crumble topping on top of the cake and bake for 25-30 minutes or until toothpick is inserted in the middle and comes out clean. Allow to cool before serving. Dust with powdered sugar.
