I wonder if H.B. Reese knew what he was doing when he invented the Peanut Butter Cup back in the early 1900’s? When he was selling Peanut Butter Cups to anyone who would buy them, I wonder if he knew that people would take his recipe and concept to create Buckeyes, Peanut Butter Blossoms, Peanut Butter Cake, with Chocolate Frosting and I wonder, if he were able to see into the future, how he would’ve felt about this Peanut Butter and Brownie Mousse Cake Recipe? This Peanut Butter Brownie Mousse Cake recipe has a brownie bottom that was made with a box of brownie mix (yes I use box mixes from time to time); the filling is a peanut butter mousse filled with chopped Reese’s Peanut Butter Cups and toffee pieces; and finally, I topped the cake with whipped cream and chocolate curls. You totally do not have to top off with the chocolate shards, but whipped cream is essential because of the light and airy texture as it goes against the dense brownie and extra creamy peanut butter mousse. This Peanut Butter Brownie Mousse Cake Recipe has a brownie bottom and a peanut butter mousse filling that will knock your socks off!
Ingredients
- 1 Brownie Mix Box (including its contents water, oil, and egg)
- 4 oz. cream cheese, softened
- 1 ½ c. creamy peanut butter
- ½ c. powdered sugar
- 2 tsp. Vanilla extract
- ½ c. milk
- 8 oz. Creamy Whipped Topping
- 8 Reese’s Peanut Butter Cups, chopped
- ⅓ c. toffee pieces
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Preheat oven to 350 Degrees. Spray a 9 ½ inch springform pan with baking spray and set aside.
- In a large bowl, prepare the brownie mix as instructed. Add the brownie mix, oil, egg, and water in the bowl and mix until well blended. Pour the brownie mix in the springform pan and bake for 20-25 minutes. Allow cooling completely.
- In a separate bowl, blend the cream cheese and peanut butter together. Add the powdered sugar and vanilla extract. Slowly add the milk making the mixture creamy. Fold in the whipped topping using a rubber spatula until there are no streaks. Fold in the toffee and peanut butter cup pieces and pour on top of the brownie bottom and smooth the top. Place in freezer for, at least 4 hours. Top off with whipped cream around the edges and chocolate shavings, if desired, and keep refrigerated until ready to serve.
