I cannot tell you how seriously thrilled I am about having my baby within the next two weeks. Now before you say your “ahh’s” and “congrats”, let me tell you why I am excited to have this baby. Although I am happy to see the face of my baby boy, hear his cry, feed him, and bond with him, I am extremely excited to be done with this gestational diabetes diet! Now, I don’t think I will ever go back and eat whatever I want and however I want due to the fact that I am more prone to get Type II diabetes and my son could also get diabetes as well. Nevertheless, I am happy to eat how I want and try some different things and not have to worry about my sugar spiking up if I try something different.
There are certain fruits like grapes and oranges that I cannot eat because my sugar raises like hands in a Baptist church on Sunday mornings. When it comes to breads and pastas I have to be very careful as well as potatoes or anything else that is carb heavy. Its driving me crazy! It’s the counting and the hunger pangs that is killing me. Although, I am not hungry as I often as I was when I started the diet, it is still a daunting eating lifestyle. I can’t wait to play my own rules and get healthy my way. No this is not complex in terms of taste pairings, but for me it does stretch my cooking abilities a bit. I knew I wanted to make some sort of pizza, but I didn’t want to make a regular pizza with sauce, cheese, and pepperoni. That idea is kind of like “duh”. Then I thought, why not make an Indian Inspired Pizza. The more I thought about it I didn’t want to go in that direction as I am not adept to working with Indian flavors and ingredients. Somewhere in the madness of my mind making something sweet and salty with ricotta cheese just made sense to me. With that idea in mind, I give you Prosciutto and Pear Flatbread Pizzas! You can eat these for yourself or make them and cut them into cute triangles to serve at your next holiday party. The choice is yours. Either way you won’t be disappointed.

Try something new for your holiday parties this year! These Prosciutto and Pear Flatbread Pizzas are great as a meal or a delicious appetizer.
Ingredients
- 6 Mini Stonefire Naan breads
- 2 c. Ricotta Cheese, more if needed
- 1 tbsp. Olive oil
- 4 oz. Prosciutto, chopped
- ½ c. sweet onion, chopped
- 2 pears, peeled and sliced
- 2 tbsp. Butter
- ½ tbsp. Sugar
- 2 c. Gorgonzola Cheese crumbles
- Honey for drizzle
Instructions
- Preheat oven to 325 Degrees
- In a medium saute skillet, heat the tablespoon of olive oil on medium heat and add the onion and cook to caramelize, about 5-7 minutes. Add the prosciutto and cook for another 5 minutes. Set aside.
- In a separate medium saute pan on medium heat, melt the butter. Add the pears and cook for 5 minutes until soft. Sprinkle with sugar and cook for another 5 minutes. Set aside.
- Line a baking sheet with parchment paper or a silicone mat. Place Stonefire’s Mini Naan on the baking sheet. Take 2 spoonfuls of the ricotta cheese and spread evenly on the flatbread. Sprinkle with the prosciutto mixture and sauted pears evenly amongst all the flatbreads. Top off with Gorgonzola Cheese and place in the oven for 10 minutes. Once the pizzas are done, drizzle with honey. Serve whole or cut into triangles.
