These Scalloped Potatoes are made with white cheddar cheese, chives, and bacon!
When I was younger, scalloped potatoes was one of my favorite side dishes to eat. I would get so excited when I knew we were going to have them for dinner. There was a certain duration in my life where I did not eat them that often. It was mostly during my college years. Then, I became aware of the crap that was in the packaged scalloped potatoes and I stopped eating them. It broke my heart……until I learned how to make them from scratch.
This recipe is perfect for making Scalloped Potatoes from scratch!
This recipe that I am getting ready to share with you is still unhealthy but I say if you are going to make unhealthy food make it from scratch so that way you know what you’re putting into it and you can make adjustments and substitutes as you see fit.
And, I think cooking from scratch is healthier anyway even if your dish isn’t the healthiest. This recipe consists of sharp white cheddar cheese and Gruyere cheese. I added some chives in the mixture and sprinkled more on top along with some bacon pieces. You don’t have to do that if you don’t want to. If you only want to stick with cheese, that is totally fine. In fact, this recipe is very similar to my Loaded Baked Macaroni and Cheese recipe.
However, I do recommend that you try the recipe to the fullest the first time and then change some things around the second time and have fun with it. This recipe can feed up to 6 people (I think), but depending on the serving size, it could definitely feed more. Therefore, if you are looking for the perfect side dish to serve your family I recommend that you make some homemade scalloped potatoes.

Description
White Cheddar Cheese and Chive Scalloped Potatoes White Cheddar and Gruyere Cheese, chives, and bacon. This is the perfect side dish for any occasion!
Ingredients
- • 4 tbsp butter
- • 3 tbsp + 2 tsp flour
- • 2 1/2 c. milk
- • 6 Yukon Golden potatoes, sliced thinly
- • 1/4 c. chives, more for garnishing
- • 1 1/2 c. sharp white cheddar cheese, divided
- • 1 1/2 c. Gruyere cheese, divided
- • 1 c. bacon bits (turkey or pork)
- • salt and pepper to taste
Instructions
- Preheat oven to 350 Degrees
- Slice the potatoes thinly and layer evenly in an oven-safe skillet or casserole dish set aside. In a medium-sized pot melt the butter on medium heat. Once the butter has completely melted, whisk in the flour a tablespoon and then teaspoon at a time until fully incorporated and becomes slightly brown.
- Begin to add the milk a cup at a time while whisking to make sure there aren’t any clumps forming. Once all the milk has been added, continue to stir slightly while the milk mixture begins to thicken. This should take about 5 minutes. Bring the milk mixture to steam. Add a half cup of each of the cheeses, 1/4 c. of chives and stir. The mixture will thicken even more. Once the cheese has completely melted inside the milk mixture season with a little salt and pepper and pour over the potatoes.
- Top off with the remaining cheeses, sprinkle with more chopped chives, and the bacon bits. Place on top of a baking sheet so when everything overflows its doesn’t drip on your oven floor. Bake inside the oven for 1 hour and until the cheese on top is golden brown. When finished remove from oven and allow to cool for about 10 to 15 minutes.
