Chocolate cake was never my favorite cake. In fact, I will say that there was a time in my life where it was my absolute least favorite. I have known for Chocolate Cake to be very dry and dull. The best part of a Chocolate Cake for me was the icing and that says a lot for me because I’m not that big on icing. But now, Chocolate Cake has meaning!
I realized that if I am going to eat Chocolate Cake that it has to be dense. Almost the same consistency of a brownie. Most steak houses serve a 7 layer chocolate cake that has the consistency that I like and it is similar to this cake that I made for you.
To give you an idea of how rich this cake is, I’ll just tell you that there isn’t any flour in it. It consist of 6 eggs beaten to death until they become pale and doubled in size with a whole bunch of chocolate. It is so good , but for me, too rich. That is why I thought it would be a good idea to use chocolate mousse filling instead of a butter cream to give the cake some lightness to balance out the richness of the cake. Raspberries are good with chocolate. In fact, any berry (strawberry, blackberry, raspberry) goes good with chocolate because it give a delicate flavor to the chocolate. With a cake this rich with chocolate mousse and chocolate ganache you are going to thank me for adding the raspberry part. Trust me.
This is not my first “Baby Cake” idea. I made Nutella Baby Cakes last year that you loved, but the cake for that recipe was a Chocolate Shaffon Cake; very light and dense that cake. Baby Cakes are a good idea for a dinner party, baby or bridal showers, or even a dinner for two. They are cute and you can be very creative with them. You know Valentines Day is coming up, right?
