- 2 tsp. Black pepper
- 2 tbsp. Olive Oil
- 2 10.5 oz. cans of Cream of Cheddar or Cream of Broccoli Cheddar condensed soup
- 1 c. milk
- Dollop of Sour cream
- 8 oz. Broccoli florets
- 2 c. shredded sharp cheddar cheese
- 2 c. crushed Ritz crackers
Instructions
- Preheat oven to 375 Degrees. Set a 9X13 casserole dish to the side.
- Add the chicken thighs in a large bowl and season with tour favorite seasoning sallt or all-purpose seasoning along with the black pepper. I like to use this as my Tony’s Chachere’s Creole Seasoning as my preferred seasoning salt. Toss to coat evenly on both sides.
- In a large skillet on medium high heat add the olive oil. Sear the chicken thighs on both side until nicely golden but not all the way cooked, Remove from skillet and inside a 9X13 baking dish.
- In a large bowl add the cream of cheddar or cheddar broccoli soup, add the milk and the sour cream and whisk until combined and smooth.
- Pour the soup over the chicken, sprinkle with the broccoli cuts, sprinkle with sharp cheddar, and finally the crushed crackers.
- Bake in the preheated oven for 20-25 minutes. Remove from oven and allow to cool before serving.
- Serve with a side of rice, mashed potatoes, and veggies for a complete meal.
