Ingredients
- 1 box yellow cake mix
- 4 eggs
- 3/4 c. vegetable oil
- 1 tsp. pure vanilla extract
- 1 c. sour cream
- 1 c. fresh peaches, diced and slightly smooshed
- 1 c. light brown sugar
- 1 tbsp. ground cinnamon
- 2 c. powdered sugar
- 1 tbsp. Melted unsalted butter
- 3 tbsp. Milk
- Pinch of salt
Instructions
- Preheat the oven to 350 Degrees. Spray a 9X13 baking dish with baking spray and set aside.
- In a large bowl, combine the cake mix, eggs, vegetable oil, vanilla extract, and sour cream with a handheld or standing mixer.
- Beat the mixture until smooth and well combined, and gently fold in the diced peaches.
- Pour the cake batter in the baking dish. In a medium bowl, combine the brown sugar, and ground cinnamon and mix.
- Sprinkle over top of the cake batter and take the sharp end of a knife and swirl the sugar mixure around a bit making cinnamon swirls. Bake in the oven for 25-30 minutes or until a toothpick can be inserted and it comes out clean in the center of the cake.
- Once baked, remove from oven and allow to cool. In a separate small bowl, combine the powdered sugar, melted butter, milk, and a pinch of salt and whisk together until smooth. Drizzle the glaze over the warm cake and allow to set and continue to cool.
- Slice into squares and serve warm.
