Can you believe that Christmas is next week?!
I think I speak for more than half of the population when I say that Christmas definitely snuck up on us this year. In fact, I think the entire year of 2013 went by really fast. It feels like I just celebrated my 30th birthday. Now in two months I will be celebrating my 31st. Man, life is so short and really passes you by. I guess that is why you have to make everyday count. Life is too short to spend it doing something you don’t love or that you feel no passion about. Good thing I made this Gingerbread Snack Cake.
One day (I am claiming it right now and putting it in the Universe) I will be a full-time food blogger. You guys, I have so many ideas that extend beyond creating good recipes. Don’t get me wrong, I love blogging and I love getting your comments everyday on how you love one of my recipes as well, but I am really thinking big about my contribution to the Kingdom of God. I strongly believe that this blog is the mustard see for all of it! I just hope that you guys continue to be loyal fans, share my recipes, and Sex Articles with the world because I really pour my heart and soul in what I do and what I write in hopes that it will begin the ending of cycles that thrive on low self-confidence in the kitchen, confusion with matters of the heart, and an easy dessert to make for Christmas. HA! You like how I turned that around didn’t you?
Let’s talk about this Gingerbread Snack Cake. Well……its easy. It’s perfect to make on Christmas Eve or for a holiday party that everyone will enjoy. Well, everyone that like gingerbread that is. It is also perfect with coffee. How many coffee lovers are out there? All of you huh? Well have you ever tried coffee from the brand Lavazza? Well you should! I normally don’t drink coffee, but I do love the way it smells. However, I decided to try the Classico flavor from Lavazza and it is pretty darn good! Very fresh and strong (any coffee is strong to me). I highly recommend it! If you combine the coffee with this cake, man o man! If that doesn’t get you in the Christmas spirit I don’t know what will.

Ingredients
- 1 stick unsalted butter, room temperature, plus more for pan
- 2 1/2 c. all-purpose flour
- 1 c. boiling water
- 2 tsp. baking soda
- 2 tsp. ground ginger
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2/3 c. packed dark-brown sugar
- 1/2 c. unsulfured molasses
- 1/2 c. dark maple syrup
- 1 tablespoon freshly grated ginger
- 2 large eggs, room temperature, lightly beaten
- TOPPING
- 2 1/2 c. powdered sugar
- 2 tbsp. melted butter
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1/4 tsp. all spice
- 1/4 tsp. cloves
- 1/2 tsp. salt
- 2 tbsp. milk
Instructions
- Preheat oven to 350 Degrees and spray a 9X13 rectangular baking dish with baking spray or grease with butter and dust with flour.
- In a large mixing bowl, combine boiling water and baking soda; set aside. In a large bowl , sift together the flour, spice, salt, and baking powder and set aside.
- Using an electric mixer, beat the butter until creamy, beat in the brown sugar until fluffy. Beat in the molasses, maple syrup, and grated ginger, baking soda, and flour mixture. Beat in the eggs.
- Pour in the batter into a the prepared pan, bake for about 30-35 minutes or until toothpick is inserted and comes out clean and allow to cool.
- Using a medium shallow bowl, combine the powdered sugar, spices, salt, butter, and milk and whisk the glaze until the glaze becomes thick and smooth. If it is too thick for you add in more milk a teaspoon at a time until it reaches the consistency you desire. Allow the glaze to set and cut into squares.
